If I search for the weight of a tank in the internet I often get conflicting data. For example the T55:

Wikipedia:
Empty 36 t
Combat 42 t

Other source:
Empty 36
Combat 38 t

I know that the weight can change when a tank is being upgraded, additional armour etc. but is there a rule to figure the weight difference between empty and combat?

There is no set rule. Each vehicle varies. It all depends on amount of ammunition storage, full fuel load, average pers kit, average food/water supplies for roughly 72 hours.

There is no set rule, but here is one for ya. My Panzer was rated at 46 tons empty and once up armoured became over 56 tons combat weight in the sandbox. The the last Panzer I was in was rated as 70 tons combat weight with all of the bells and whistles including a bobbel-head Jesus.....

The differences can also be from the use of metric tons or US short tons, when measuring the weight.

Tanks take a lot of ammunition and fuel. T-72 takes (IIRC):

Diesel: 1020kg (normal), 1360kg (max)
Oils: 50kg
Main gun ammunition: 1050kg (normal), 1200kg (max)
12.7mm MG rounds: 50kg
7.62mm MG rounds: 50kg
Small arms, ammunition, grenades, smokes etc 50-100kg

Tanks have set amounts of everything to be combat ready. Combat weight is the tanks gross weight when it is combat ready. Definition of combat ready may, and does vary from user to another, and that may cause some difference in numbers too.

Empty is pretty self-explanatory, isn't it?
