Is there a German Special Forces team?

Modern or past ?

At the moment we have

KSK - Kommando Spezialkräfte
KS - Kampfschwimmer

They are pretty much our top highspeed SF Units.

Nope - only these two.
The Kommando Spezialkräfte (KSK) are the army's special forces unit, with the usual tasks:
Operation behind enemy lines, sabotage, reconnaissance, assassination of key enemy personnel, but also stuff like hostage extraction.

The Kampfschwimmer (combat swimmers) belong to the navy. They are actually only one of two units who are collectively known as Waffentaucher (weapon divers). The other unit are the Minentaucher (mine divers). They share training but not tasks:
1. Kampfschwimmer: Maritime commandos, somewhat like American SEALs
2. Minentaucher: Underwater demolitions, placing and disposing of mines

Well, If we are talking about all germans special teams, than we should mention Police SEK(Spezial Einsatzkommando???) teams too ;)

Precisely. GSG-9 is a unit of the Federal Border Police.
Its members are police officers, not soldiers. GSG-9 is surely an Elite Unit and has special tasks but I would call it a "Special Forces Unit".

When the Fernspähkompanien existed, were they staffed with professionals at all levels of rank doing it for a living, or were they units staffed with conscripts commanded by full time officers and NCO's?
Understand it so that one of the companies within KSK is Fernspäh dedicated, while the other "teeth arm sub units" of that force are classed as Kommando kompanien?

Almost correct, Leo. But there is still the Fernspählehrkompanie 200, which is part of DSO but not of KSK. The other Fernspäh Companies were dissolved and the personnel intergrated into KSK.

Conscripts could never become Fernspäher, the training is much to hard and too long, so that would not make much sense, wouldn't it?

Well, one of the KSK companies specialises in Far Recon missions, that's it. The American 1SFOD uses a similiar structure by the way, and KSK was formed especially after SAS and Delta.
