Just how do the british get their hats like this? Do you guys pin them, or what? Do you have to have a size too big to get it to fit right? Pics of what I mean are below:

Well, I am not a Limey (I'm an American!) but I always got my boonie to do that by folding the brim with my fingers. They tend to assume a shape and stay there.

Just pull and fold, no problems at all. Add a couple of stiches if you want it permanent

In the jungle we trim the brim with scissors (don't need the sun protection in the trees and it gives better visability). Like this (I know it's not the jungle, but it's an old hat and I like it...)

Some guys stitch the top, most just get it wet and pull it into shape (a bit like shaping a beret).

I think the newer issue "Bush" style hats have shorter brims also, wheras the old "Jungle" types have larger brims.

i always cut the brims...
shape my boonie by getting it really sticky because i never wash the damn thing :)
then just slide it to the front and it always stays there
some guys of my pletoon stitch the the front together... but i'll stay with my old sticky smelly dirty boonie

I wonder. Can you starch the hats to make them keep shape?

Hmm... Perhaps I might ditch my DPM peaked cap for a bush hat for airsofting, my goggles fog up quite a bit with the peaked cap as there is not that much space between the top of my goggles and the hat, perhaps a bush hat would have more space between there so my goggles wouldn't fog up as much.

You could try....but I reckon your gucci look would fade in minutes once you're active.
I'd go with some stitching.
If I had my digital camera handy I'd try to post mine.
If you want to keep the sides down, stitch them to the drawstring or use a piece of elastic stitched into it.
We also took out the plastic wire running through the brim(cut a small slit and pull it out)....if it's run through a dryer it gets all bent to frick and makes you look like a pogue.
We also stitch down the top quite a bit so it's riding more on top of your head, more shallow.
But to be honest...at the end of the day...it's one small piece of kit you can personalize a bit without getting busted.
Best bit of advice......get a sewing kit and go to town...and don't get frustrated if it doesn't look right the first or second time.
I must have spent 3-4 hours on mine to get it right...and as Corporal D told us "If you look good, you are good! Right now you look like sh!te!"
