Probably the same thing as other soldiers.
Gripe, look for food, loot, booze, women, and gamble, or just sleep from exhaustion.
But it really depends on the location.

They were smoking Jumo cigarettes and later machorka (russian tobacco - for hard bastards and bears only). Many of them managed to learn how to drink bimber. Bimber is a kind of homemade alcohol very popular in Russia and Poland. But if you aren't Pole or Russian don't try to drink ;) .
Also they were using polish and russian girls as *** slaves. :(

Cognac was the favorite liquor among german officers.
As mentioned Cigarettes or Cigars, fine food when available, women and classical music like Wagner, Bach, Mozart, Beethoven
Forgot hanging out in the Casino, getting drunk with fellow officers and gambling

Let us not forget the fine, enjoyable, and civilzed art of pipe smoking. :D
