All services have the DEP program for enlisted personel.

There was a week or so of water survival in boot back in 1993/1994. Jumping off a platform with a basic infantry load, how to maneuver, save yourself and your gear, etc. A little bit about rescuing your less able brethren...

The USMC currently has some kind of combative system that wasn't around while I was in, so I'm not familiar with it. It sounds effective, though. We did boxing, arm bars, counter joint techniques, kicks and stomps, etc.
