Mann, DePalma, Scorsese, Tarantino, Spielberg can do some good stuff when he tries.
I feel Ridley Scott can be a bit hit and miss, his style lends itself well to some films, not quite as well to others.

Most some already mention, James Cameron, Alfred Hitchcock and Robert Altman.
Michel Gondry (mostly for Eternal Sunshine), Richard Linklater, Wes Anderson, at times Spielberg (The Color Purple for instance), Alejandro Amenábar, Tim Burton, and I'll throw in Almodóvar for extreme originality.

As far as living film makers go, Ridley Scott and Quentin Tarintino.

I dig Tony Scott's style; "Man On Fire" was a pretty damn cool movie, with all of the quick cut-scenes and what-not. Of course, Domino was the most obnoxious movie ever.
