Aged Cheddar of more than a few makes and Gorgonzola. Aged Gouda is nice too, as well as Prima donna and Robusto. Dubliner is a nice meeting of cheddar and swiss type flavors, I'm not much of a swiss fan. Taleggio as a honorable mention.

Yes, me too. its weird, i dont really eat cheese, and i certainly dont apportion any of my budget for any, especially nice expensive cheese, although on a few occasions i have been treated to some nice cheese. Stilton stands out in my mind as what i liked best, also i heard if you eat it soon before bed it might make you have weird dreams. wikipedia that ****. I also attended a stinky cheese party once and was the only one who brought limburger. cant remember if i ate it or not. I like the idea of artisan cheese, im just not old enough to divert my meager beer funds yet.
Geez, where to start?! I have so many. Syrian string cheese, kashkaval, morbier, comte, shropshire, marscapone, baby swiss, stilton, the list goes on.
Oh, and I forgot - LIMBURGER!!!
Wow, I love most of them. Chevre and Feta (love feta in an omlette with tomato and bacon) Sharp Chedders, Double and Triple Creams like Camambert (we get Presidents) although, it is sometimes hard to know when they will rippen if they're in a box. Prefer dated ones Thanks.... if I can't see 'em. Havarti and Prov and American and Swiss on my Ham & Cheese sammiches. Monterey Jack & Colby on the Mexican stuff. I never met a cheese I did not like.
