In Albany we have Disco Fries (so named in the late 70s because, you got them at the one or two only restaurants open at 4:30AM after the bars closed. Smothered in beef gravy (turkey or pork will do also.) And salt of course.
Most of us use catsup (ketchup) on the fries (chips.) Some places here have malted vinegar though. Both with application of lots of salt.
Spicey curly fries also popular.

I do like Worcestershire sauce. Really good if you're having cheese on toast.
