Yeah, even if you have a sarcastic tone, it's difficult for them to prove you were being a smart-ass.
I wouldn't say another word to her. Even saying "have a nice day" could escalate the situation when you are trying to deescalate it. I have used my sarcastic wit at work... and a few times it only lead for the situation to continue on or get worse. Even in the presence of jerks, swallow your pride, remain professional, respectful, and don't let them push your buttons. Remember "sticks and stone may break my bones," but words are just words and not the same as physical force.

That's what my boss told me to do.
